Break 2 large eggs into a bowl. Add a pinch of salt and pepper. Beat the eggs with a fork until the yolks and whites are fully combined.
Heat 1 tablespoon of butter in a non-stick pan over medium heat. Once the butter has melted, pour in the beaten eggs.
Let the egg cook undisturbed until it starts to set around the edges, about 1-2 minutes.
Stir the egg with a spatula, pushing it from the edges towards the center. Continue to cook, stirring occasionally, until the egg is mostly cooked but still slightly runny, about 2-3 minutes.
Remove the pan from the heat and let the residual heat cook the egg to a soft, slightly creamy texture. Serve immediately.
