Pesarattu
Pesarattu is a popular breakfast dish from Andhra Pradesh, India. It is a type of dosa made from green gram (moong dal) and rice, served hot with a side of coconut chutney or sambar. Ingredients: Green gram, Rice, Coconut chutney, Cooking oil, Salt, Ginger, Green chilli

Soak 1 cup of green gram and 2 tablespoons of rice in water for about 6 hours or overnight.

Drain the water and grind the soaked green gram and rice along with 1-2 green chillies, a small piece of ginger, and salt to taste. Add water as needed to make a smooth batter.

Heat a tawa or non-stick pan on medium heat. Once hot, pour a ladle full of batter in the centre and spread it evenly in a circular motion to make a thin dosa.

Drizzle a teaspoon of oil around the edges and let it cook for 2-3 minutes until the bottom turns golden brown.

Flip the dosa and cook the other side for another 1-2 minutes.

Serve the Pesarattu hot with coconut chutney or sambar.
