Boil 500 grams of penne pasta in a large pot of salted water until it is al dente. Drain and set aside.

In a large pan, heat 2 tablespoons of olive oil over medium heat. Add 2 cloves of minced garlic and sauté until fragrant.

Add 200 grams of chopped spinach to the pan and cook until it wilts.

Lower the heat and add 200 grams of ricotta cheese to the pan. Stir until the cheese melts and forms a creamy sauce.

Add the cooked penne to the pan and toss until the pasta is well coated with the sauce.

Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese.
