Penne with Roasted Red Pepper Sauce is a delightful Italian dish with a spicy twist. The smoky, sweet flavour of the roasted red peppers combined with the creamy texture of the sauce makes this dish a must-try for pasta lovers. Preheat your oven to 200 degrees Celsius. Place 2 red bell peppers on a baking sheet and roast for about 25-30 minutes until the skin is charred.

Remove the peppers from the oven and let them cool. Once cooled, peel off the skin, remove the seeds and chop them into pieces.

In a pan, heat 2 tablespoons of olive oil. Add 1 finely chopped onion and 2 cloves of minced garlic. Sauté until the onions are translucent.

Add the chopped roasted peppers, 1 teaspoon of red chilli flakes, salt to taste, and sauté for another 2 minutes.

Transfer this mixture to a blender, add 1/2 cup of fresh cream and blend until smooth.

Cook 250 grams of penne pasta as per the instructions on the packet. Drain and set aside.

Pour the roasted red pepper sauce over the cooked pasta. Toss well to ensure the pasta is well coated with the sauce.

Garnish with freshly chopped basil leaves and grated parmesan cheese before serving.
