Boil 200 grams of penne pasta in a large pot of salted water until it is al dente. Drain and set aside.
In a blender, combine 1 ripe avocado, 2 cloves of garlic, 1 tablespoon of lemon juice, 1/4 cup of fresh basil leaves, salt to taste, and 1/4 cup of olive oil. Blend until smooth.
Heat a pan over medium heat, add the avocado sauce and cook for 2-3 minutes.
Add the cooked penne pasta to the pan and toss well to coat the pasta in the sauce.
Serve hot, garnished with grated parmesan cheese and fresh basil leaves.
