Patoleo (sweet Rice Cakes)
Patoleo, also known as Patoli, is a traditional Goan dessert made during festivals. It is a sweet rice cake, steamed in turmeric leaves, which gives it a unique flavour and aroma. Ingredients: Turmeric leaves, Rice, Coconut, Jaggery, Cardamom powder

Soak 250 grams of rice overnight. Drain the water and grind it into a fine paste using a little water.

Soak 100 grams of jaggery in 1/2 cup of water until it dissolves completely. Strain the jaggery water to remove any impurities.

In a pan, add the jaggery water and 1 cup of grated coconut. Cook on medium heat until the mixture thickens.

Add 1/2 teaspoon of cardamom powder to the coconut-jaggery mixture and mix well. This will be the filling for the Patoleo.

Spread the rice paste evenly on a turmeric leaf. Place a spoonful of the coconut-jaggery filling in the centre and fold the leaf in half.

Repeat the process with the remaining rice paste and filling.

Steam these wrapped leaves in a steamer for about 15-20 minutes.

Allow them to cool before unwrapping. The Patoleo is ready to be served.
