Take 100 grams of fresh paneer and crumble it into small pieces.
Chop 1/2 of a medium-sized onion, 1/2 of a medium-sized tomato, and 1/2 of a small capsicum into small pieces.
Heat 1 tablespoon of oil in a pan on medium flame. Add the chopped onions and sauté until they turn golden brown.
Add the chopped tomatoes and capsicum to the pan and sauté for another 2-3 minutes.
Now, add the crumbled paneer, 1/2 teaspoon of red chilli powder, 1/4 teaspoon of turmeric powder, and salt as per taste. Mix well and cook for another 2-3 minutes.
Remove the paneer mixture from the flame and let it cool.
Take 2 slices of bread and spread a layer of the paneer mixture on one side of each slice.
Cover the paneer layer with another slice of bread.
Heat a sandwich maker or a grill pan. Place the sandwich in it and grill until it turns crispy and golden brown.
Cut the sandwich into halves and serve hot with ketchup or green chutney.
