Paneer Biryani
Paneer Biryani is a delightful and aromatic dish that combines fragrant basmati rice with soft and succulent paneer cubes. This dish is a vegetarian's delight and is perfect for those special occasions when you want to cook something exotic yet comforting. Ingredients: Basmati rice, Paneer, Biryani masala, Ghee, Tomato, Malli, Pudina, Turmeric powder, Onion, Ginger garlic paste, Salt, Red chilli powder

Rinse 250 grams of basmati rice under running water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

Heat 2 tablespoons of ghee in a pan, add 200 grams of paneer cubes and fry until they turn golden brown. Remove the paneer cubes and set them aside.

In the same pan, add 1 finely chopped onion and sauté until it turns golden brown. Add 1 tablespoon of ginger-garlic paste and sauté until the raw smell goes away.

Add 2 chopped tomatoes, 1 teaspoon of red chilli powder, 1/2 teaspoon of turmeric powder, 1 teaspoon of biryani masala, and salt as per taste. Cook until the tomatoes turn mushy.

Add the fried paneer cubes to the pan and mix well. Cook for 2-3 minutes.

In a separate pot, bring 1 litre of water to a boil. Add the soaked and drained rice to the boiling water. Cook the rice until it is 70% cooked, then drain the water.

Layer the partially cooked rice over the paneer mixture in the pan. Sprinkle a handful of chopped coriander leaves and mint leaves over the rice. Cover the pan with a lid and cook on low heat for 20-25 minutes.

After 25 minutes, remove the lid and gently fluff the biryani with a fork. Serve hot with raita or your choice of side dish.
