Onion and Potato Soup is a hearty and comforting dish, perfect for a chilly evening. This soup is a blend of caramelized onions and creamy potatoes, seasoned with herbs and spices, offering a delightful burst of flavours. Peel and finely chop 2 large onions and 2 medium-sized potatoes.

In a large pan, heat 2 tablespoons of oil over medium heat. Add the chopped onions and sauté until they turn golden brown.

Add the chopped potatoes to the pan and stir well. Cook for about 5 minutes until the potatoes start to soften.

Pour in 1 litre of vegetable stock into the pan. Bring the mixture to a boil.

Reduce the heat to low, cover the pan, and let it simmer for about 20 minutes until the potatoes are completely cooked and soft.

Use a hand blender to puree the soup until it is smooth. If you prefer a chunkier soup, you can skip this step.

Season the soup with salt, pepper, and a pinch of nutmeg. Stir well.

Serve the soup hot, garnished with fresh coriander leaves.
