Mooli Ka Achar (radish Pickle)

Mooli Ka Achar is a tangy and spicy pickle made from white radish, mustard oil, and a blend of Indian spices. This pickle is a perfect accompaniment to any Indian meal, adding a burst of flavor to your palate. Ingredients: White radish, Fennel seeds, Vinegar, Salt, Fenugreek seeds, Turmeric powder, Red chilli powder, Mustard oil, Mustard seeds

Peel and cut 500 grams of white radish (mooli) into small pieces.

Sprinkle 2 tablespoons of salt over the radish pieces and leave them aside for an hour. This process will remove the excess water from the radish.

After an hour, squeeze out the remaining water from the radish pieces.

Heat 250 ml of mustard oil in a pan until it starts to smoke. Then, let it cool down to room temperature.

In a separate bowl, mix 2 tablespoons of mustard seeds, 1 tablespoon of fennel seeds, 1 tablespoon of fenugreek seeds, 1 tablespoon of turmeric powder, 1 tablespoon of red chilli powder, and 2 tablespoons of vinegar.

Add the radish pieces to this spice mixture and mix well.

Pour the cooled mustard oil over the radish and spice mixture. Mix well to ensure all the radish pieces are coated with the oil and spices.

Transfer the pickle into a clean, dry glass jar. Make sure the pickle is submerged in the oil.

Keep the jar in sunlight for 5-6 days for the pickle to mature.

After 5-6 days, the Mooli Ka Achar is ready to be served.
