Take 250 grams of maida (all-purpose flour) in a bowl. Add a pinch of salt and 2 tablespoons of ghee (clarified butter). Mix well.

Gradually add water and knead into a soft dough. Cover the dough and let it rest for 30 minutes.

Divide the dough into small equal portions and roll each portion into a small round disc using a rolling pin.

Heat oil in a kadai (wok) on medium flame. Once the oil is hot, gently slide the rolled dough into the oil.

Press gently with a spatula to puff up the luchi. Flip and fry the other side until golden brown.

Remove the luchi with a slotted spoon and drain on kitchen paper to remove excess oil.
