Hyderabadi Biryani
Hyderabadi Biryani is a royal and aromatic dish that is a feast for the taste buds. It is a perfect blend of fragrant basmati rice, tender meat, and a mix of exotic spices, all cooked to perfection.

Soak 500 grams of basmati rice in water for 30 minutes.

In a large pan, boil water with salt, a few cloves, and a cinnamon stick. Add the soaked rice and cook until it's 70% done. Drain the water and keep the rice aside.

Marinate 500 grams of chicken or mutton with 200 grams of yogurt, 2 tablespoons of ginger-garlic paste, 1 tablespoon of red chilli powder, 1 tablespoon of turmeric powder, and salt as per taste. Let it sit for at least 2 hours.

In a large pan, heat 100 ml of ghee. Add 2 sliced onions and fry until golden brown. Remove half of the fried onions for garnishing.

Add the marinated meat to the pan and cook on medium heat until the meat is tender and the spices are well absorbed.

Layer the partially cooked rice over the cooked meat. Sprinkle fried onions, chopped coriander leaves, and saffron soaked in 2 tablespoons of milk.

Cover the pan with a tight lid and cook on low heat for about 20-30 minutes until the rice is fully cooked and flavors are well combined.

Serve the Hyderabadi Biryani hot with raita or mirchi ka salan.
