Start by peeling 500 grams of carrots and cutting them into 2-inch pieces.
In a large pan, add enough water to cover the carrots and bring it to a boil. Add the carrots and cook for about 10 minutes or until they are tender.
While the carrots are boiling, prepare the glaze. In a small bowl, mix together 2 tablespoons of honey, the juice of one orange, and a pinch of salt.
Once the carrots are cooked, drain the water and return the carrots to the pan.
Pour the honey and orange mixture over the carrots and stir well to ensure all the carrots are coated.
Cook the carrots on medium heat for another 5-7 minutes, until the glaze has thickened and the carrots are well coated.
Serve the carrots hot, garnished with some fresh coriander leaves.
