Preheat your oven to 200 degrees Celsius.
Take 500 grams of potatoes, wash them thoroughly and cut them into halves.
In a large bowl, mix together 2 tablespoons of olive oil, 4 cloves of minced garlic, 1 teaspoon of dried rosemary, 1 teaspoon of dried thyme, salt and pepper to taste.
Add the halved potatoes to the bowl and toss them until they are well coated with the herb and garlic mixture.
Arrange the potatoes on a baking tray in a single layer.
Roast the potatoes in the preheated oven for about 30-35 minutes or until they are golden brown and crispy.
Serve the Herb and Garlic Roasted Potatoes hot, garnished with fresh parsley.
