Rinse 1 cup of Goan red rice under running water until the water runs clear.

Soak the rice in water for about 30 minutes.

In a pressure cooker, add the soaked rice and 2 cups of water.

Add 1 teaspoon of salt and stir well.

Close the lid of the pressure cooker and cook on medium heat for about 15-20 minutes or until the rice is cooked.

Once the pressure is released naturally, open the lid and fluff the rice gently with a fork.

Serve the Goan red rice hot with your favourite curry or dal.
