Goan Kokum Curry
Goan Kokum Curry, also known as Sol Kadhi, is a refreshing and tangy dish from the coastal region of Goa. This pink-coloured curry is a perfect blend of kokum, coconut milk, and spices, offering a burst of flavours with every sip. Soak 10-12 pieces of kokum in 1 cup of warm water for 30 minutes.

In a mixer, add 1 cup of freshly grated coconut and 2-3 green chillies. Grind it to a smooth paste using a little water.

Extract the juice from the soaked kokum by squeezing it. Discard the kokum and keep the juice aside.

Mix the ground coconut paste with the kokum juice. Add 2 cups of water to it and mix well.

Strain this mixture using a strainer to get a smooth liquid.

Heat 1 tablespoon of oil in a pan. Add 1 teaspoon of cumin seeds and let them crackle.

Add 2 finely chopped garlic cloves and sauté until they turn golden.

Pour the strained kokum and coconut mixture into the pan. Add salt as per taste.

Let it simmer for 5-7 minutes on low heat.

Garnish with finely chopped coriander leaves before serving.
