Preheat your oven to 180 degrees Celsius.
In a large bowl, mix 200 grams of maida (all-purpose flour), 1 teaspoon of baking soda, 2 teaspoons of ground ginger, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground cardamom, and a pinch of salt.
In another bowl, beat 100 grams of softened butter and 150 grams of brown sugar until it becomes fluffy.
Add 1 egg and 125 grams of molasses to the butter mixture and mix well.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Roll out the dough to about 1/4 inch thickness on a lightly floured surface.
Use cookie cutters to cut out your desired shapes and place them on a baking sheet lined with parchment paper.
Bake for 10-12 minutes or until the edges are slightly browned.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
