Eggplant Lasagna is a delicious and healthy alternative to traditional lasagna. This dish is packed with layers of eggplant, cheese, and tomato sauce, making it a perfect meal for vegetarians and those looking for a low-carb option. Preheat your oven to 180 degrees Celsius.

Slice 2 large eggplants lengthwise into thin slices. Sprinkle some salt on them and set aside for 15 minutes.

Rinse the eggplant slices under cold water and pat dry using a kitchen towel.

Heat 2 tablespoons of oil in a pan and fry the eggplant slices until they are golden brown. Set them aside.

In the same pan, add 1 finely chopped onion and 2 cloves of minced garlic. Saute until they turn golden.

Add 500 grams of crushed tomatoes, 1 teaspoon of dried basil, 1 teaspoon of dried oregano, salt, and pepper to taste. Let it simmer for 15 minutes.

In a bowl, mix 500 grams of ricotta cheese, 1 beaten egg, and 50 grams of grated Parmesan cheese.

In a baking dish, spread a layer of the tomato sauce, followed by a layer of eggplant slices, a layer of the cheese mixture, and finally a layer of grated mozzarella cheese. Repeat the layers until all ingredients are used, ending with a layer of mozzarella cheese.

Bake in the preheated oven for 25 minutes or until the cheese is bubbly and golden.
