Boil 4 eggs for about 10-12 minutes until they are hard-boiled. Once done, peel the eggs and keep them aside.
Heat 2 tablespoons of oil in a pan. Add 1 teaspoon of cumin seeds and let them splutter.
Add 2 finely chopped onions and sauté until they turn golden brown.
Add 1 tablespoon of ginger-garlic paste and sauté until the raw smell goes away.
Add 2 chopped tomatoes, 1 teaspoon of turmeric powder, 1 teaspoon of red chilli powder, 1 teaspoon of coriander powder, and salt as per taste. Cook until the tomatoes are soft and the spices are well blended.
Add 1 cup of water and bring the mixture to a boil.
Add the boiled eggs and simmer for about 10 minutes until the eggs are well coated with the gravy.
Garnish with chopped coriander leaves and serve hot.
