Dibba Rotti is a traditional Andhra dish that is crispy on the outside and soft on the inside. It is a thick pancake made from rice and urad dal, and is a perfect breakfast or snack option.

Soak 1 cup of rice and 1/4 cup of urad dal separately for 4-5 hours.

Drain the water and grind the rice and urad dal separately into a smooth paste. Mix them together in a bowl.

Add salt to taste and mix well. Let the batter ferment overnight.

Heat a thick-bottomed pan on medium flame and add 2 tablespoons of oil.

Pour the batter into the pan until it is half full. Cover the pan and cook on low flame for 20-25 minutes.

Once the bottom turns golden brown, flip the rotti and cook for another 10-15 minutes.

Remove from the pan and let it cool before cutting into pieces.
