Take 200 grams of sweet corn and boil it in a pan for about 10 minutes until it becomes soft.
In a bowl, mix the boiled corn, 100 grams of grated cheese, 1 finely chopped onion, 1 finely chopped capsicum, 1 finely chopped green chilli, and salt to taste.
Heat a tawa and place one tortilla on it. Spread the corn and cheese mixture evenly on the tortilla and cover it with another tortilla.
Cook it on medium flame until the cheese melts and the tortilla becomes crispy. Flip it over and cook the other side as well.
Cut the quesadilla into quarters using a pizza cutter or a sharp knife. Serve hot with salsa or sour cream.
