Boil 200 grams of pasta in a large pot of salted water until it is al dente. Drain and set aside.

In a large pan, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped onion and sauté until it turns translucent.

Add 1 chopped bell pepper and 1 chopped zucchini to the pan. Sauté the vegetables until they are tender.

Add 2 cloves of minced garlic, 1 teaspoon of red chilli flakes, salt to taste, and 1 teaspoon of mixed Italian herbs to the pan. Stir well to combine.

Add the cooked pasta to the pan and toss well to combine. Cook for another 2-3 minutes until the pasta is well coated with the vegetables and spices.

Garnish with freshly chopped coriander leaves and serve hot.
