Basil And Tomato Soup
Basil and Tomato Soup is a tangy, aromatic, and comforting dish that is perfect for a cozy evening. The freshness of basil leaves combined with the tanginess of tomatoes creates a delightful flavour that is sure to please your taste buds. Take 500 grams of ripe tomatoes, wash them thoroughly and chop them into small pieces.

Heat 2 tablespoons of olive oil in a pan over medium heat. Add 1 finely chopped onion and 2 cloves of minced garlic to the pan and sauté until the onions turn translucent.

Add the chopped tomatoes to the pan along with 1 teaspoon of sugar, salt to taste, and freshly ground black pepper. Cook until the tomatoes are soft and mushy.

Add 500 ml of vegetable stock to the pan and bring the mixture to a boil. Reduce the heat and let it simmer for about 15-20 minutes.

After the soup has simmered, add a handful of fresh basil leaves. Turn off the heat and let the soup cool down a bit.

Once the soup has cooled, blend it in a mixer until it is smooth. Strain the soup to remove any seeds or skin.

Reheat the soup in the pan, adjust the seasoning if needed, and serve hot garnished with a few fresh basil leaves and a dollop of cream.
