Preheat your oven to 200 degrees Celsius.
Wash 2 large sweet potatoes thoroughly and pat them dry.
Prick the sweet potatoes all over with a fork. This will help the steam to escape and the potatoes to cook evenly.
Place the sweet potatoes on a baking tray and bake for about 45-50 minutes or until they are soft and fully cooked.
Once done, remove from the oven and let them cool for a few minutes.
Slice the sweet potatoes in half lengthwise and fluff the insides with a fork.
Drizzle with 1 tablespoon of olive oil, sprinkle with a pinch of salt and pepper, and garnish with fresh coriander leaves. Serve hot.
