Peel and slice 500 grams of potatoes into thin slices. Soak them in water for about 10 minutes to remove excess starch.
Drain the water and pat dry the potato slices using a clean kitchen towel.
Heat 250 ml of mustard oil in a kadai on medium flame. Once the oil is hot, add the potato slices.
Fry the potato slices until they turn golden brown and crispy. Make sure to flip them occasionally for even cooking.
Sprinkle 1 teaspoon of turmeric powder, 1 teaspoon of red chilli powder, and salt as per taste. Mix well to ensure all the potato slices are well coated with the spices.
Continue to fry for another 2-3 minutes. Once done, remove the potato slices using a slotted spoon and drain them on an absorbent paper to remove excess oil.
Serve hot with a sprinkle of chaat masala on top.
