Take 250 grams of sugar in a bowl and add 1/2 cup of water to it. Heat it on a medium flame until the sugar dissolves completely.
Once the sugar syrup is ready, add 1/2 cup of ghee to it and mix well.
Now, slowly add 500 grams of maida (all-purpose flour) to the sugar and ghee mixture, ensuring no lumps are formed. Knead it into a soft dough.
Divide the dough into equal portions and roll each portion into a thick chapati.
Cut the rolled dough into diamond shapes using a knife or a cutter.
Heat oil in a kadai on medium flame. Once the oil is hot, deep fry the diamond cuts until they turn golden brown.
Drain the fried shankarpali on a paper towel to remove excess oil. Let them cool completely before storing in an airtight container.
