Mohanthal
Mohanthal is a traditional Gujarati sweet dish made from gram flour, ghee, and sugar. It's a rich, dense, and fudgy dessert that melts in your mouth and leaves a lingering taste of cardamom and saffron. Ingredients: Gram flour, Ghee, Sugar, Milk, Cardamom powder, Almonds, Pistachio

Take 250 grams of gram flour (besan) in a bowl. Add 60 grams of melted ghee to it and mix well to form a crumbly mixture. Let it rest for 30 minutes.

After 30 minutes, sieve this mixture through a large-holed sieve to get a coarse texture.

In a pan, heat 200 grams of ghee. Add the coarse gram flour mixture to it and roast on low flame for about 15-20 minutes until it turns golden brown.

In another pan, make sugar syrup by boiling 250 grams of sugar with 125 ml of water. Cook until the syrup reaches a two-string consistency.

Add the roasted gram flour mixture to the sugar syrup. Mix well and cook for another 5-7 minutes.

Add 1/2 teaspoon of cardamom powder and a pinch of saffron strands soaked in 2 tablespoons of milk. Mix well.

Transfer the mixture to a greased tray and spread evenly. Sprinkle chopped almonds and pistachios on top. Let it cool and set for a few hours.

Once set, cut the Mohanthal into square pieces and serve.
