Basundi
Basundi is a rich and delicious dessert of thickened milk, almonds, and pistachios, with a hint of saffron for that delightful golden hue. Take 1 litre of full cream milk in a heavy bottomed pan and bring it to a boil.

Once the milk starts boiling, reduce the flame to low and let it simmer. Keep stirring occasionally to prevent the milk from sticking to the bottom of the pan.

After about 30 minutes, the milk will reduce to half its original quantity. Now, add 100 grams of sugar and stir well until it dissolves completely.

Add a pinch of saffron strands soaked in 2 tablespoons of warm milk, 1/4 teaspoon of cardamom powder, and a handful of chopped almonds and pistachios. Mix well.

Continue to simmer the milk on low flame for another 10-15 minutes until it thickens to your desired consistency.

Turn off the flame and let the basundi cool down. It will thicken further upon cooling.

Serve the basundi chilled, garnished with some more chopped nuts.
