Wash and peel 500 grams of sweet potatoes. Cut them into small cubes.
Heat 2 tablespoons of oil in a pan over medium heat. Add the sweet potato cubes and sauté until they turn golden brown and crispy. This should take about 15-20 minutes.
In a separate bowl, mix 1 teaspoon of chaat masala, 1/2 teaspoon of red chilli powder, 1/2 teaspoon of roasted cumin powder, and salt to taste.
Once the sweet potatoes are cooked, transfer them to the bowl with the spice mix. Toss well to ensure all the cubes are coated evenly.
Squeeze the juice of one lemon over the sweet potatoes and mix well.
Garnish with finely chopped coriander leaves and serve hot.
