Take 200 grams of rajgira flour (amaranth flour) in a bowl. Add 1 teaspoon of rock salt (sendha namak) and mix well.

Add 2 tablespoons of mashed boiled potato to the flour. Mix it well with your hands until the mixture resembles breadcrumbs.

Gradually add water and knead into a soft dough. Let it rest for 10 minutes.

Divide the dough into small equal portions. Roll each portion into a ball.

Dust the rolling surface with some rajgira flour. Place a dough ball on it and gently roll it into a circle of about 5-6 inches in diameter.

Heat a tawa (griddle) on medium flame. Place the rolled paratha on the tawa and cook until brown spots appear on one side.

Flip the paratha and cook the other side until it has brown spots as well. Apply some ghee on both sides while cooking.

Repeat the process with the remaining dough balls. Serve the rajgira paratha hot with yogurt or any side dish of your choice.
