Take 250 grams of mixed vegetables like pumpkin, brinjal, potato, radish, and beans. Clean, peel and chop them into small pieces.
Heat 2 tablespoons of mustard oil in a pan over medium heat. Add 1 teaspoon of panch phoron (Bengali five spice mix) and let it splutter.
Add 2 dry red chillies and a pinch of hing (asafoetida). Sauté for a few seconds.
Add the chopped vegetables to the pan. Mix well and cover the pan. Cook on low heat for about 15-20 minutes, stirring occasionally.
Once the vegetables are cooked, add 1/2 teaspoon of turmeric powder, 1 teaspoon of red chilli powder, and salt to taste. Mix well.
Add 1/2 cup of water and increase the heat to medium. Cover the pan and let it cook for another 10 minutes.
Finally, add 1 teaspoon of ghee and 1 teaspoon of sugar. Mix well and cook for another 2-3 minutes.
