Kesar Modak

Soak 1/4 teaspoon of saffron strands in 2 tablespoons of warm milk for about 10 minutes.

In a pan, add 1 litre of full cream milk and bring it to a boil.

Add the saffron milk to the boiling milk and stir well.

Lower the flame and let the milk simmer until it reduces to half its quantity.

Add 100 grams of sugar and stir until it dissolves completely.

Now, add 50 grams of milk powder to the mixture and stir continuously to avoid lumps.

Cook the mixture until it thickens and leaves the sides of the pan.

Remove the mixture from the flame and let it cool.

Meanwhile, prepare the dough for the modak. Mix 2 cups of rice flour with water and knead into a soft dough.

Divide the dough into small balls and flatten each ball into a disc.

Place a spoonful of the prepared saffron mixture in the center of each disc.

Bring the edges together and seal the modak.

Steam the modaks for about 10-15 minutes.

Serve the Kesar Modak warm or chilled as per preference.
