Tricolor Vegetable Pasta
Tricolor Vegetable Pasta is a vibrant, delicious, and healthy Italian dish with an Indian twist. It's a perfect blend of colorful vegetables, pasta, and spices that will tantalize your taste buds. Boil 200 grams of tricolor pasta in a large pot with enough water, a pinch of salt, and a few drops of oil until it is al dente. Drain the water and keep the pasta aside.

In a pan, heat 2 tablespoons of olive oil. Add 1 finely chopped onion and sauté until it turns golden brown.

Add 1 finely chopped green bell pepper, 1 finely chopped red bell pepper, and 1 finely chopped yellow bell pepper to the pan. Sauté the vegetables for a few minutes until they are slightly cooked but still crunchy.

Add 2 finely chopped tomatoes, 1 teaspoon of red chili flakes, 1 teaspoon of mixed herbs, and salt to taste. Cook until the tomatoes are soft.

Add the boiled pasta to the pan and mix well so that the pasta is well coated with the vegetables and spices.

Garnish with grated cheese and fresh basil leaves. Serve hot.
