Egg Fried Rice
Egg fried rice is a delicious and versatile Indo-Chinese dish made with fluffy rice, scrambled eggs, and a mix of vegetables, seasoned with soy sauce and spices.

Cook 250 grams of basmati rice in a pressure cooker or rice cooker, and let it cool completely.

In a large pan or wok, heat 2 tablespoons of oil over medium heat. Add 1 finely chopped onion and 2 finely chopped green chillies, and sauté until the onions turn golden brown.

Add 1/2 cup of finely chopped mixed vegetables (carrots, beans, bell peppers, etc.) and cook for 3-4 minutes until they are slightly tender.

Push the vegetables to one side of the pan and add 2 beaten eggs to the other side. Scramble the eggs until they are fully cooked.

Mix the scrambled eggs with the vegetables and add the cooked rice to the pan. Stir gently to combine all the ingredients.

Add 2 tablespoons of soy sauce, 1/2 teaspoon of black pepper powder, and salt to taste. Mix well and cook for another 2-3 minutes.

Garnish with chopped spring onion greens and serve hot.
