Veg Singapore Noodles
Veg Singapore Noodles is a delicious and flavorful Indo-Chinese dish made with rice noodles, stir-fried vegetables, and a blend of aromatic spices. Ingredients: Rice noodles, Carrot, Garam masala, Spring onion, Black pepper powder, Garlic, Cabbage, Soy sauce, Capsicum, Vinegar, Onion, Cooking oil, Red chilli sauce, Ginger, Tomato sauce, Green chilli

Boil 200 grams of rice noodles as per the package instructions, drain the water, and set aside.

In a small bowl, mix 2 tablespoons of soy sauce, 1 tablespoon of tomato ketchup, 1 tablespoon of red chili sauce, and 1 teaspoon of vinegar. Set aside.

Heat 2 tablespoons of oil in a large pan or wok over medium heat. Add 1 teaspoon of finely chopped ginger and 1 teaspoon of finely chopped garlic. Sauté for a minute.

Add 1 finely chopped onion and 1 finely chopped green chili. Sauté until the onion turns translucent.

Add 1/2 cup of thinly sliced bell peppers (capsicum), 1/2 cup of thinly sliced carrots, and 1/2 cup of shredded cabbage. Stir-fry the vegetables for 3-4 minutes until they are slightly tender but still crunchy.

Add the prepared sauce mixture to the vegetables and mix well.

Add the cooked rice noodles to the pan and toss gently to combine with the vegetables and sauce.

Sprinkle 1/2 teaspoon of black pepper powder and 1/2 teaspoon of garam masala. Mix well and cook for another 2 minutes.

Garnish with chopped spring onion greens and serve hot.
