In a food processor, add 200 grams of boiled and mashed potatoes, 100 grams of grated paneer, 100 grams of finely chopped mixed vegetables (carrots, beans, peas, and corn), 50 grams of finely chopped onions, 2 finely chopped green chilies, 1 tablespoon of ginger-garlic paste, 1/2 teaspoon of garam masala, 1/2 teaspoon of chaat masala, 1/2 teaspoon of red chili powder, salt to taste, and 50 grams of breadcrumbs. Blend everything together to form a smooth mixture.
Divide the mixture into equal portions and shape each portion into a cylindrical kebab around a skewer or a thick wooden stick.
Preheat a grill or an oven to 180°C. Place the kebabs on a greased baking tray or grill rack and brush them with some oil.
Grill the kebabs for 15-20 minutes, turning them occasionally and brushing with more oil, until they are evenly cooked and golden brown.
Serve the Veg Seekh Kebabs hot with mint chutney and lemon wedges.
