Veg Manchow Soup
Veg Manchow Soup is a delicious and spicy Indo-Chinese soup loaded with vegetables and flavored with soy sauce, chili sauce, and a hint of ginger and garlic. Ingredients: Cabbage, Soy sauce, Capsicum, Cooking oil, Plain noodles, Spring onion, Red chilli sauce, Onion, Carrot, Green chilli, Beans, Salt, Ginger, Vinegar, Garlic, Corn starch

In a large pot, heat 2 tablespoons of oil. Add 1 tablespoon finely chopped ginger, 1 tablespoon finely chopped garlic, and 2 finely chopped green chilies. Sauté for a minute until fragrant.

Add 1/2 cup finely chopped onions and cook until they turn translucent.

Add 1/2 cup finely chopped carrots, 1/2 cup finely chopped cabbage, 1/2 cup finely chopped capsicum, and 1/2 cup finely chopped beans. Cook the vegetables for 3-4 minutes until they are slightly tender.

In a small bowl, mix 2 tablespoons of cornstarch with 1/4 cup of water to make a slurry. Set aside.

Add 4 cups of vegetable stock or water to the pot with the vegetables. Bring it to a boil.

Add 2 tablespoons of soy sauce, 1 tablespoon of red chili sauce, and salt to taste. Mix well.

Slowly pour the cornstarch slurry into the soup while stirring continuously. Cook for 2-3 minutes until the soup thickens.

Add 1/4 cup of chopped spring onion greens and mix well.

Turn off the heat and add 1 tablespoon of vinegar. Stir well.

Serve the Veg Manchow Soup hot, garnished with fried noodles or crispy fried bread.
