Veg Jalfrezi
Veg Jalfrezi is a colorful and delicious Indian dish made with a medley of vegetables cooked in a spicy tomato-based gravy, perfect for a wholesome meal.
Ingredients: Mixed vegetables, Onion, Red chilli powder, Cooking oil, Kasuri methi, Coriander powder, Turmeric powder, Salt, Coriander, Tomato, Cumin seeds, Ginger garlic paste, Garam masala

Chop 200 grams of mixed vegetables (carrots, beans, bell peppers, cauliflower, and peas) into bite-sized pieces.

Heat 2 tablespoons of oil in a pan over medium heat. Add 1 teaspoon of cumin seeds and let them crackle.

Add 1 finely chopped onion and sauté until it turns golden brown.

Add 1 tablespoon of ginger-garlic paste and sauté for a minute.

Add 2 chopped tomatoes and cook until they turn soft and mushy.

Add 1 teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 teaspoon of coriander powder, and 1 teaspoon of garam masala. Mix well and cook for 2-3 minutes.

Add the chopped vegetables and 1/2 cup of water. Mix well, cover the pan, and cook for 10-12 minutes or until the vegetables are cooked but still retain their crunch.

Add salt to taste and 1 tablespoon of kasuri methi (dried fenugreek leaves). Mix well and cook for another 2 minutes.

Garnish with chopped coriander leaves and serve hot with roti, naan, or rice.
