Veg Hot And Sour Soup
Veg Hot and Sour Soup is a delightful Indo-Chinese dish that combines tangy, spicy, and umami flavors in a warm and comforting bowl of soup, perfect for any weather. Ingredients: Cabbage, Capsicum, Carrot, Vegetable stock, Black pepper powder, Spring onion, Vinegar, Onion, Cooking oil, Salt, Corn starch, Soy sauce, Green chilli sauce, Eggs, Red chilli sauce

In a bowl, mix 3 tablespoons of cornstarch with 1/4 cup of water and set aside.

In a large pot, heat 1 tablespoon of oil over medium heat. Add 1/2 cup of finely chopped onions, 1/4 cup of finely chopped carrots, 1/4 cup of finely chopped cabbage, and 1/4 cup of finely chopped capsicum. Sauté the vegetables for 3-4 minutes until they are slightly softened.

Add 1 liter of vegetable stock or water to the pot and bring it to a boil.

Once the stock is boiling, add the cornstarch mixture to the pot and stir well. This will help thicken the soup.

Add 2 tablespoons of soy sauce, 1 tablespoon of vinegar, 1 teaspoon of red chili sauce, and 1 teaspoon of green chili sauce to the soup. Mix well and let it simmer for 5-6 minutes.

Add salt and black pepper to taste. You can also add more chili sauce if you prefer a spicier soup.

In a small bowl, whisk 1 egg and slowly pour it into the soup while stirring continuously. This will create egg ribbons in the soup.

Garnish the soup with chopped spring onions and serve hot.
