Take 6 slices of bread and toast them until they are golden brown and crispy.
In a bowl, mix 1/2 cup of grated cabbage, 1/2 cup of grated carrot, 1/4 cup of finely chopped capsicum, 1/4 cup of finely chopped onion, and 1/4 cup of boiled and mashed corn. Add salt and pepper to taste.
In another bowl, mix 1/2 cup of hung curd or mayonnaise with 1/4 teaspoon of black pepper and a pinch of salt.
Spread the curd or mayonnaise mixture evenly on one side of each toasted bread slice.
Place a layer of the mixed vegetables on top of the spread on one slice of bread.
Place another slice of bread on top of the vegetables, spread side facing down.
Add a layer of sliced cucumber, tomato, and onion on top of the second bread slice.
Place the third slice of bread on top of the vegetables, spread side facing down.
Cut the sandwich diagonally into 4 equal parts and secure each part with a toothpick.
Repeat the process for the remaining bread slices to make another sandwich.
