Veg Clear Soup
Veg clear soup is a light and refreshing appetizer that is packed with the goodness of fresh vegetables and subtle flavors, perfect for a healthy meal. Ingredients: Mixed vegetables, Vegetable stock, Garlic, Cooking oil, Coriander, Salt, Black pepper powder, Ginger, Corn starch

Wash and finely chop 200 grams of mixed vegetables (carrots, beans, cabbage, and bell peppers).

In a deep pan, heat 1 tablespoon of oil and add 1 teaspoon of finely chopped garlic and 1 teaspoon of finely chopped ginger. Sauté for a minute.

Add the chopped vegetables to the pan and stir-fry for 2-3 minutes on medium heat.

Pour 1 liter of vegetable stock or water into the pan and bring it to a boil.

Add salt and black pepper to taste, and let the soup simmer for 10-12 minutes until the vegetables are cooked but still retain their crunch.

In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to form a slurry. Add this to the soup and stir well to thicken the soup slightly.

Cook for another 2 minutes, then turn off the heat and add 1 tablespoon of freshly chopped coriander leaves.

Serve the veg clear soup hot, garnished with more coriander leaves if desired.
