Cut 250 grams of paneer into cubes and set aside.
Chop 1 large onion, 1 large capsicum (bell pepper), and 2 medium tomatoes into small pieces.
In a small bowl, mix 1 teaspoon ginger-garlic paste, 1 teaspoon red chili powder, 1/2 teaspoon turmeric powder, 1 teaspoon coriander powder, 1/2 teaspoon garam masala, and 1/2 teaspoon cumin powder with 2 tablespoons of water to make a spice paste.
Heat 2 tablespoons of oil on a tawa or a flat pan over medium heat.
Add the chopped onions and sauté until they turn golden brown.
Add the spice paste and cook for 2-3 minutes, stirring continuously.
Add the chopped tomatoes and cook until they become soft and mushy.
Add the chopped capsicum and cook for another 2-3 minutes.
Add the paneer cubes and mix gently, ensuring the paneer is well coated with the masala.
Cook for 5-7 minutes, stirring occasionally, until the paneer is cooked and the flavors are well combined.
Garnish with chopped coriander leaves and serve hot.
