In a large bowl, mix 250 grams of gram flour (besan) and 250 grams of all-purpose flour (maida). Add 60 ml of melted ghee and mix well to form a crumbly mixture.

In a heavy-bottomed pan, heat 500 grams of sugar with 250 ml of water over medium heat. Stir continuously until the sugar dissolves and forms a syrup with a one-string consistency.

Add 1/4 teaspoon of cardamom powder and a pinch of saffron strands to the sugar syrup. Mix well.

Slowly pour the sugar syrup into the flour mixture, stirring continuously to avoid lumps. Keep stirring until the mixture becomes light and fluffy.

Grease a flat tray or plate with ghee and spread the mixture evenly on it. Allow it to cool for 10-15 minutes.

Once the mixture has cooled, cut it into square or diamond-shaped pieces using a sharp knife.

Gently remove the soan papdi pieces from the tray and store them in an airtight container.
