Shorba
Shorba is a delicious and comforting Indian soup, packed with flavors from a blend of aromatic spices and herbs, perfect for a cozy meal.
Ingredients: Onion, Bottle gourd, Carrot, Tomato, Masoor dal, Ginger garlic paste, Coriander, Hing, Cumin seeds, Turmeric powder, Salt, Ghee, Garam masala, Red chilli powder

In a pressure cooker, heat 2 tablespoons of oil and add 1 chopped onion, 2 chopped tomatoes, 1 chopped carrot, and 1/2 cup chopped bottle gourd. Sauté for 5-7 minutes until the vegetables are slightly softened.

Add 1/4 cup of washed and soaked masoor dal (red lentils) to the pressure cooker.

Add 1 teaspoon of ginger-garlic paste, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, 1/2 teaspoon of garam masala, and salt to taste. Mix well.

Pour in 750 ml of water and close the pressure cooker lid. Cook for 3-4 whistles on medium heat.

Once the pressure releases, open the cooker and blend the cooked mixture using a hand blender until smooth.

Strain the blended mixture through a sieve to remove any lumps and obtain a smooth consistency.

Transfer the strained shorba back to the pressure cooker or a saucepan and bring it to a boil. Adjust the consistency by adding more water if required.

In a small pan, heat 1 tablespoon of ghee and add 1/2 teaspoon of cumin seeds. Once they start to crackle, add a pinch of asafoetida and pour this tempering over the shorba.

Garnish with chopped coriander leaves and serve hot with bread or rice.
