Schezwan Dosa
Schezwan Dosa is a delicious fusion of the traditional South Indian dosa and the spicy Chinese Schezwan sauce, making it a perfect treat for your taste buds. Ingredients: Urad dal, Dosa rice, Schezwan sauce, Soy sauce, Green chilli, Onion, Capsicum, Salt, Coconut chutney, Poha, Ginger, Cooking oil, Garlic, Vinegar

Prepare the dosa batter by mixing 2 cups of dosa rice, 1/2 cup of urad dal, and 1/4 cup of poha. Soak them in water for 4-5 hours, then grind them into a smooth batter. Ferment the batter for 8-10 hours.

Prepare the Schezwan sauce by heating 2 tablespoons of oil in a pan. Add 1 tablespoon of finely chopped garlic, 1 tablespoon of finely chopped ginger, and 2-3 finely chopped green chilies. Sauté for a minute.

Add 1/4 cup of finely chopped onions and sauté until they turn translucent. Then, add 1/4 cup of finely chopped capsicum and cook for 2-3 minutes.

Add 1/4 cup of Schezwan sauce, 1/2 teaspoon of soy sauce, 1/2 teaspoon of vinegar, and salt to taste. Mix well and cook for 2-3 minutes. Set aside.

Heat a non-stick tawa and pour a ladleful of dosa batter onto it. Spread it evenly in a circular motion to make a thin dosa.

Drizzle some oil around the edges of the dosa and cook until it turns golden brown.

Spread 2 tablespoons of the prepared Schezwan sauce mixture evenly over the dosa.

Fold the dosa in half and cook for another minute. Remove from the tawa and serve hot with coconut chutney.
