Sabzi Biryani
Sabzi Biryani is a delightful combination of aromatic basmati rice and mixed vegetables, infused with a blend of Indian spices, making it a perfect one-pot meal for any occasion.
Ingredients: Basmati rice, Vegetable, Bay leaf, Cinnamon stick, Turmeric powder, Ginger garlic paste, Onion, Ghee, Cumin seeds, Coriander powder, Green cardamom, Black cardamom, Coriander, Garam masala, Salt, Red chilli powder, Clove

Rinse 250 grams of basmati rice in water and soak it for 30 minutes. Drain the water and set the rice aside.

In a pan, heat 2 tablespoons of ghee or oil. Add 1 teaspoon of cumin seeds, 2-3 cloves, 2 green cardamoms, 1 black cardamom, 1-inch cinnamon stick, and 1 bay leaf. Sauté for a minute until the spices release their aroma.

Add 1 finely chopped onion and sauté until it turns golden brown.

Add 1 tablespoon of ginger-garlic paste and cook for 2 minutes.

Add 250 grams of mixed vegetables (carrots, beans, peas, cauliflower, and potatoes) and cook for 5 minutes.

Add 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 teaspoon of coriander powder, and 1/2 teaspoon of garam masala. Mix well and cook for another 2 minutes.

Add the soaked and drained rice to the pan and gently mix it with the vegetables and spices.

Pour 500 ml of water into the pan and add salt to taste. Bring the mixture to a boil.

Reduce the heat to low, cover the pan, and cook for 15-20 minutes until the rice is cooked and the water is absorbed.

Garnish with chopped coriander leaves and serve hot with raita or any side dish of your choice.
