In a large mixing bowl, combine 2 tablespoons of oil, 1 teaspoon of red chili powder, 1 teaspoon of coriander powder, 1/2 teaspoon of turmeric powder, 1/2 teaspoon of garam masala, 1 teaspoon of amchur powder, salt to taste, and 1 tablespoon of cornflour. Mix well.
Add the potato wedges to the spice mixture and toss until they are evenly coated.
Place the coated potato wedges on a baking tray lined with parchment paper, ensuring they are spaced apart.
Bake the potato wedges in the preheated oven for 30-35 minutes, flipping them halfway through, until they are golden brown and crispy.
Remove the potato wedges from the oven and serve hot with ketchup or your favorite dipping sauce.
