Preheat the oven to 200°C.
In a bowl, mix 200 grams of all-purpose flour, 1 teaspoon of sugar, 1 teaspoon of salt, and 1 teaspoon of instant yeast. Gradually add 120 ml of warm water and knead the dough until smooth and elastic. Cover the dough and let it rest for 1 hour.
In a pan, heat 1 tablespoon of oil and sauté 1 finely chopped onion, 1 finely chopped capsicum, and 100 grams of cubed paneer until slightly golden. Set aside.
Roll out the rested dough into a 12-inch circle and place it on a greased pizza tray.
Spread 4 tablespoons of peri-peri sauce evenly over the pizza base, leaving a small border around the edges.
Sprinkle 150 grams of grated mozzarella cheese over the sauce.
Arrange the sautéed paneer and veggies on top of the cheese.
Bake the pizza in the preheated oven for 15-20 minutes or until the crust is golden and the cheese is melted and bubbly.
Remove from the oven, slice, and serve hot.
