In a bowl, mix 200 grams of grated paneer, 1 finely chopped onion, 1 finely chopped green chili, 1/2 teaspoon red chili powder, 1/2 teaspoon garam masala, 1/4 teaspoon chaat masala, 1/4 teaspoon amchur powder, and salt to taste. Set aside the paneer filling.
In another bowl, mix 250 grams of maida (all-purpose flour), 1/2 teaspoon baking powder, 1/2 teaspoon sugar, a pinch of salt, 2 tablespoons of oil, and 100 ml of dahi (yogurt). Knead the mixture into a soft dough using water as needed. Cover and let it rest for 30 minutes.
Divide the dough into equal portions and roll each portion into a ball. Flatten each ball and stuff it with the paneer filling. Seal the edges and roll it out gently into a slightly thick kulcha.
Preheat a tawa or griddle on medium heat. Place the rolled kulcha on the tawa and cook for 1-2 minutes until bubbles appear. Flip the kulcha and cook the other side for another 1-2 minutes until golden brown spots appear.
Apply some butter or ghee on the cooked kulcha and serve hot with mint chutney or yogurt.
