Paneer Dum Biryani
Paneer Dum Biryani is a mouth-watering, aromatic, and flavorful Indian dish made with marinated paneer, fragrant basmati rice, and a blend of exotic spices, cooked in a 'dum' style to infuse the flavors.
Ingredients: Paneer, Basmati rice, Cooking oil, Onion, Green cardamom, Essence, Cinnamon stick, Salt, Ghee, Biryani masala, Coriander, Ginger garlic paste, Red chilli powder, Mint leaves, Tomato, Turmeric powder, Bay leaf, Clove, Curd, Cumin seeds

Rinse 250 grams of basmati rice in water and soak it for 30 minutes. Drain the water and set aside.

In a bowl, mix 200 grams of cubed paneer with 150 grams of thick curd, 1 teaspoon of ginger-garlic paste, 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 teaspoon of biryani masala, salt to taste, and 2 tablespoons of chopped coriander leaves. Marinate for 30 minutes.

In a deep pan, heat 3 tablespoons of ghee. Add 1 teaspoon of cumin seeds, 2 bay leaves, 3 cloves, 2 green cardamoms, and 1-inch cinnamon stick. Sauté for a minute.

Add 1 thinly sliced large onion and cook until golden brown. Then, add 1 chopped tomato and cook until soft.

Add the marinated paneer to the pan and cook for 5-7 minutes on medium heat.

In another pan, boil 1.5 liters of water with 1 teaspoon of salt, 1 teaspoon of oil, and 2-3 drops of kewra essence. Add the soaked rice and cook until it's 70% cooked. Drain the water.

Layer the partially cooked rice over the paneer mixture in the deep pan. Sprinkle 1/4 cup of chopped mint leaves, 1/4 cup of chopped coriander leaves, and 1/4 cup of fried onions on top.

Seal the pan with aluminum foil or dough and place a tight-fitting lid on top. Cook on low heat for 20-25 minutes to allow the flavors to infuse (dum cooking).

Gently mix the biryani and serve hot with raita or a side salad.
